CHIPOTLE CHEESEBURGERS
FIRST PLACE

For the burgers:

1 � lbs. ground beef, 80 percent lean

2 tbsp. Tex-Mex chili seasonings

2 tsp. chipotles in adobo sauce

cup beer  

Salt and pepper to taste

Oil for grill

For the sauce:

1 � tsp. chipotles in adobo sauce

cup mayonnaise  

For the assembly:

4 hamburger buns, toasted

4 slices pepper jack cheese

Lettuce  

Tomato slices

Red onion slices

Avocado slices

Remove chipotles from can, split open and scrape out seeds. Finely chop and set aside.

Make the sauce by stirring together the mayonnaise and 1 � teaspoons of the chopped chipotles in a small bowl. Cover and refrigerate until ready to use.

For the burgers, combine ground beef, chili seasoning, 2 teaspoons of the chopped chipotles and beer and mix well. Shape into four patties. Season with salt and pepper.

Brush grill with oil. Grill burgers over high heat, and cook 4 to 5 minutes on each side.

Several minutes before burgers are done, top with cheese to melt.

Serve on toasted buns topped with chipotle mayonnaise, lettuce, tomatoes, red onion and avocado slices.

Makes 4 burgers.
