SPICE UP YOUR SUMMER BURGER
FIRST PLACE

For the burgers:

2 lbs. lean ground pork

1 tbsp. ground cumin  
1 tbsp. paprika  
1 tbsp. chili powder  

1 tsp. steak grill seasoning

1 � tsp. grated orange peel

4 tbsp. chopped parsley

For the sauce:

cup sour cream  
cup mayonnaise  

1/8 cup bottled chili sauce

1 tbsp. chipotle sauce

1 tbsp. chopped cilantro

1 tsp. crushed red pepper

Black pepper to taste

For the assembly:

6 kaiser rolls, split and toasted

6 �-inch slices green tomatoes

Arugula leaves

Preheat grill to medium high. In a large bowl, thoroughly combine all of the burger ingredients. Shape into 6 equal patties.

Place patties on a grill and cook for 23 to 25 minutes, turning halfway into the cooking time. Internal temperature should read 160 to 170 degrees.

While burgers are cooking, prepare the sauce. In a small bowl, combine all sauce ingredients and stir well to combine. Cover and refrigerate. Sauce can be prepared up to 3 days ahead.

To assemble the burgers, spread both halves of each roll with sauce. Top six halves with arugula, place burgers on top, and top with green tomato slices and other half of bun.

Makes 6 servings.
