THAI CHICKEN FLORENTINE BURGERS
THIRD PLACE

1 lb. ground chicken

1 tsp. green curry paste

1 tbsp. fresh ginger, minced

tsp. salt

2 tbsp. fresh chopped cilantro

3 oz. fresh baby spinach

2 green onions, chopped

6 hamburger buns, toasted

For outdoor grilling, heat a cast-iron griddle on a grill at medium heat until hot. For indoor cooking, heat a nonstick skillet prepared with cooking spray at medium heat until hot.

Combine all ingredients except buns in a large bowl. Mix until thoroughly combined. Form into 6 patties. Place on heated grill or skillet. Cook three to four minutes per side for a total of 6 to 8 minutes, or until cooked through.

Serve immediately on toasted buns, with your favorite accompaniments, such as Dijon mustard, mayonnaise, lettuce, tomato or onion.

Makes 6 servings.
